There are recipe tips.

  • A filling other than chocolate frosting can be used in a layer cake. Try a berry jam.
  • When you add powdered sugar to the frosting, only add a small amount at a time, or it will fly everywhere.
  • Do not use springform pans. The batter for the ultra rich and moist chocolate cake is thinner than other cake batter, so it could leak from the pan.
  • Do n’t let the peep hang too far over the side of the cake, or they could fall or slide off. Press them into the chocolate frosting.

There are tips for storing.

You can bake the cake, wrap it in paper, and store it at room temperature for up to 2 days before frosting it. For 4-5 days, the cakes are covered in room temperature. If it is hot, store it in the fridge but take it out of the fridge one hour before serving so that it can be softened a bit.

What should we serve with ?

I have lots of Easter recipes for you to choose from, but here are some of my favorites.

An Easter ham is a must. A classic honey baked ham can be made in the Instant Pot.

Tasty side dishes like Velveeta Mac and Cheese are perfect for Easter.

You can make a sweet and salty Bunny Bait snack mix.

How do I make the green frosting?

Since you are doing everything else from scratch, I think it is fine to use a can of frosting. Food coloring can be used to tint it green.

What else can I use for the center of the sunflower?

Any kind of chocolate can be used to make the center of the cookies. Use different sizes of chocolate chips to make things interesting. Instead of chocolate, pipe stars with chocolate frosting.

Can I use vanilla cake?

This easy cake decorating idea allows you to use any type of cake you want.

The bright yellow sunflower is a great decoration for an Easter cake. If you want to have fun with this recipe, pin it for later.

  • ¾

    cups

    cocoa powder

  • 3

    cups

    powdered sugar

  • 3

    tablespoons

    milk

you might need a little more

  • 1

    teaspoon

    pure vanilla extract

There are decorations.

  • 15

    Peeps Yellow Marshmallow Chicks

  • ½

    cup

    milk chocolate chips

  • ½

    cup

    green frosting

There is equipment.

  • There are 8 inch cake pans.

There are instructions.

The cake needs to be prepared and baked.

  • Preheat the oven to 375°F/190°C (170°C for fan oven).

  • Prep 2 x 8-inch/20cm cake pans by greasing them with butter and lining them with parchment paper.

  • In a bowl sift the dry ingredients (flour, cocoa powder, baking powder, baking soda, and salt), add the sugar, whisk and set aside. In a separate bowl, combine the eggs with the buttermilk or milk, oil, and vanilla extract. Mix well, then add the wet ingredients to the dry ingredients and mix to just combine (do not overmix, you don’t want to work the gluten for a moist cake).

  • Add coffee powder to boiling water, and stir in. This will thin out the batter.

  • Pour the batter into the cake pans, and bake for 30 minutes or until a toothpick inserted in the center of the cake comes out clean.

  • Remove the cakes from the oven and allow to cool in cake pans for 10 minutes. Gently turn out on a cool rack upside down, and leave them to cool completely.

The chocolate buttercream should be made.

  • In a stand mixer with a paddle attachment, beat the butter until creamy for 3 minutes.

  • Add the cocoa powder, and beat at medium speed for 2 minutes.

  • Slowly add the powdered sugar, and beat for 2 more minutes at medium speed.

  • Add milk and vanilla extract and beat again for 1 minute.

Prepare and decorate.

  • Fill the cake with buttercream between the 2 cake layers, cover the outside of the cake with a thin layer of frosting. This will lock in all of the crumbs and make the cake easier to frost neatly.

  • Place the cake in the fridge for 20 minutes, this will harden the butter in the frosting and give it a solid shape. Frost again with the remaining frosting so the cake is fully covered with buttercream.

  • To decorate the cake, arrange 15 peeps around the outer edge of the cake with their tails pointing outward. Arrange chocolate chips in the center. Use green frosting to pipe stars around the bottom edge of the cake.

  • If you do n’t want to use espresso powder in this recipe, just leave it out and use boiling water in the batter.
  • The batter of this cake is thin so use cake pans.
  • Make sure that your baking powder is active before you start. To check, add baking powder and hot water to a bowl. It is good to go if the baking powder bubbles. You need to get a new one if it is dead.
  • This cake can be eaten 8 to 10 times.
  • Do n’t let the peep hang over the edge of the cake or they will fall off.
  • You can bake the cake, wrap it in paper, and store it at room temperature for up to 2 days before frosting it. For 4-5 days, the cakes are covered in room temperature. Store it in the fridge but take it out an hour before serving.
