Daisy Cookies – Pretty Flower Cookies with Royal Icing

These daisy cookies are pretty. The lemon sugar cookie base is easy to mix and cut, it ‘s basic, and the dough is easy to mix and cut. This sugar daisy cookie recipe is simply the best because of the rich butter flavor with a hint of refreshing lemon taste.

The flowers are piped in royal icing. One of the recipes I provided here uses fresh egg white, while the other uses meringue powder. I added lemon juice to my royal icing to make it taste like lemon in the cookies.

The cookies have a soft texture and last a long time.

How to make cookies with Daisy.

These daisy cookies are made with 3 parts. The first part is shaping and baking the base flower cookies, the second part is decorating them with piped daisies and the third part is returning the frosted flower cookies back to the oven for a short baking time to set the royal icing.

There are ingredients.

The daisy flower cookies were made with these ingredients.

  • Plain flour.
  • Caster sugar.
  • There is an egg yolk.
  • There is a lemon rind.

The cookie dough is being mixed.

  • The daisy flower cookies were made using the creaming method. I started with butter and sugar and added the egg yolk after they became creamy.
  • The creaming process should not take too long. There is no need to wait for the sugar and butter to be creamy until it becomes light and fluffy. Cookies spreading too much during baking can be associated with too much mixing. It should n’t take too long to beat the egg yolk. Only one egg yolk is used in this recipe, so it should be done within a minute.
  • After that, the salt and lemon rind are added.
  • The dough would still appear a little dry after the flour was added. That is normal for these cookies. After turning the dough onto your workspace, give it a short knead to gather all the dough pieces together. Allow the dough to rest in a bowl for 10 minutes. It is easier to roll and cut when the dough is resting.

Baking cookies.

  • The next step is to shape the cookies. If you do n’t want to roll and cut the cookies, you can always form them into balls before pressing them into discs.
  • I like to cut my cookies. To prevent the cookie dough from sticking to the workspace and rolling pin, I place the dough in between clean plastic sheets and roll it with the guide of 2 dowel rods. The dough can be rolled between 2 pieces of paper. I used a round cutter to cut my cookies.
  • Lifting the cookies to the baking tray was very easy since they were rolled on a plastic sheet. Since there are no leavening agents added to the cookie dough, the cookies do not rise during baking, which means they need not be placed too far apart from each other on the baking tray.
  • For 10 minutes, bake the daisy shaped cookies. I baked mine at 160 degrees Celsius. Before decorating, let the cookies cool down to room temperature. You can make the cookies a day or two in advance.

Making the icing.

  • These pretty flower cookies are fun to decorate. Royal icing was made using fresh egg white and these are the ingredients that went into making it.
  1. Sugar that has been sieved.
  2. Egg white.
  3. Lemon juice.
  4. There is yellow food coloring.
  • It is important to make sure the utensils used for mixing are grease-free when making royal icing. If the egg whites do n’t whisk well, you will end up with royal icing.
  • The process begins when the egg white is whisked in a bowl. While the whisking continues, powdered sugar should be added in small portions. It is a good idea to sift it before adding it to the egg white. A small amount of sugar getting stuck in your piping tip can be a cause of frustration.
  • The taste of the lemon juice in my royal icing is a perfect match to the cookies. After all the sugar has been added into the egg white, this was added.

The cookies have royal icing on them.

  • I added yellow food coloring to the small bowl of icing I removed because the cookies were white and yellow. I used the round tip number 3 and the petal tip number 104 to fill it into a piping bag.
  • The daisy sugar cookies were decorated with these tools.
  • You can decorate the baked flower cookies with piped flowers once they have cooled down. The petals daisy have a white icing fitted on them. Make sure the wider end of the petals is pointing upwards and the narrower end is pointing towards the center of the cookies. It is easier to space the petals out in 2 cycles.

  • The yellow should be used to pipe the flower centers once the petals are done. Start with a medium-sized dot in the center and then add tiny dots of yellow around the initial yellow center.

The finishing touches.

  • I baked the cookies for another 2 minutes in the oven because I used fresh egg whites in the royal icing. Since I know my cookies will last for at least a couple of days, I decided to bake them a little so that the egg whites are thoroughly cooked.
  • Cool the cookies on a wire rack and then put them in a container.

Cookies

  • Grate lemon rind and keep aside.

  • In a medium bowl, cream butter and sugar until creamy. Add egg yolk and continue beating until well incorporated.

  • Next, add salt and grated lemon rind and beat again for a few more seconds.

  • Finally, add flour and beat for another few seconds until the flour is well distributed. Turn the dough onto a clean surface and knead briefly until it comes together. At this point, the dough will still be a little dry. Form the dough into a ball and let it rest in a covered bowl for about 10 minutes.

  • To form the cookies, take a handful of the dough, place it in between clean plastic sheets or parchment paper and roll to your desired thickness. I use the guide of 2 dowel rods to ensure the thickness of my cookies is consistent. Cut the cookies out using a round cookie cutter. I used a scalloped round cutter but you can use a plain round cutter if you don’t have a scalloped one.

  • Gently lift the cut cookies and place them onto a lined baking tray. Since the cookies do not rise during baking, you need not place them too far apart from each other.

  • Bake the cookies at 160°Celsius for 10 minutes. Remove the cookies from the oven and cool them on a wire rack.

The cookies should be decorated.

  • To make the icing, beat the egg white until it turns frothy. Add the sifted powdered sugar, a little at a time and continue beating until stiff peaks form. Add in the lemon juice and give the icing another couple of seconds of beating.

  • Remove about a quarter of the icing into a small bowl and add yellow food colouring to it. Mix well and fill it into a piping bag fitted with round tip number 3. Fill the remaining white icing into another piping bag fitted with petal tip number 104. Pipe the daisy petals with tip 104 and finish off the decoration by piping yellow centres for the daisies using the round tip 3.

  • Return the decorated cookies to the preheated oven for another 2 to 3 minutes until the icing sets. Remove cookies from oven and let them cool completely before storing.

The royal icing bowl and beaters should be free of grease. Before using my beaters to beat egg white, I rinse my bowl and beaters in hot water.

First, be sure to sift your icing sugar to remove any clumps. When piping, these lump can block your piping tips.

Baking time and oven temperature can be different. You should follow the baking temperature you use to bake cookies.

The cooking time will depend on the thickness of your cookies as well as the size.
